The grapes were harvested in early September at a lower ripeness to preserve the wine's freshness and lively acidity. The base wine was fermented and aged exclusively in stainless steel tanks, using a pure yeast culture. Secondary fermentation took place in the bottle and the wine was aged on the lees for 18 months , which gave it a fine effervescence.

The aroma is reminiscent of green apple and freshly dried hay . The taste is fresh, slightly fruity and mineral , with a slightly salty aftertaste .
